Ingredients:
Chopped red bell peppers | 2 |
Fajita seasoning | 1 (1.27 ounce) Packet |
Shredded Monterrey Jack cheese | 1 (8 ounce) Package |
Skinless, boneless chicken breast diced | 1 Pound |
Shredded Cheddar cheese | 1 (8 ounce) Package |
Chopped green bell peppers | 2 |
Flour tortillas | 10 (10 inch) |
Bacon bits | 1 Tablespoon |
Vegetables oil | 1 Tablespoon |
Chopped onion | 1 |
Directions:
- Preheat the broiler.
- Grease a baking sheet.
- Toss the chicken with the fajita seasoning.
- Then spread onto the baking sheet.
- Place under the broiler.
- Now Cook until the chicken pieces are no longer pink in the center or about 5 to 7 minutes.
- Preheat oven to 350 degrees F or 175 degrees C.
- Heat the oil in a large saucepan over medium heat.
- Stir in the chicken, onion, red bell peppers and green bell peppers.
- Cook and stir until the vegetables have softened.
- Layer half of each tortilla with the chicken and vegetable mixture.
- Then sprinkle with the Monterey Jack, bacon bits and Cheddar cheese.
- Fold the tortillas in half and Place onto a baking sheet.
- Bake quesadillas in the preheated oven until the cheeses have melted.
