Sweet Potato Sorbet

Ingredients :

Sweet potatoes	½ kg
Orange juice concentrate	½ cup
Salt	pinch
Brown sugar	to taste
Nutmeg	to taste

Directions :

• Boil sweet potatoes in their skins until soft. cool and peel
• Combine sweet potatoes, sugar or syrup and frozen orange juice concentrate in a food processor fitted with a steel blade
• I add a bit of salt.

• You can embellish all you like. nutmeg is fantastic.
• Freeze puree until it is almost frozen, but not hard
• Serve with sweetened whip cream and chopped candied pecans
