| Buckwheat flour | 1 1/2 cups |
| Baking powder | 2 teaspoons |
| Baking soda | 1 teaspoon |
| Salt | 1 Pinch |
| Cinnamon | 1 Pinch |
| Eggs, separated | 2 |
| Egg whites for extra lightness | 2 |
| Sugar | 2 Tbsp |
| Milk (low fat or regular) | 1 cup |
| Water | 1/4 cup |
| Plain yogurt | 1 cup |
| Butter, melted | 1/2 cup or 1 stick |
| Extra butter | for serving |
| Hot maple syrup | for serving |
| Berries | for serving |
Directions :
- Turn your waffle maker to medium setting.
- Take a bowl and whisk buckwheat flour, baking powder, baking soda and salt. Add cinnamon and whisk.
- Beat the egg whites and sprinkle sugar while beating. Beat them till soft peaks.
- Whisk egg yolks and butter, yogurt, milk and some water.
- Pour this mixture into buckwheat mixture. Fold beaten egg whites into batter and gently fold them.
- Add 1 spoon of butter to waffle maker. Pour the batter on your waffle maker. Bake until ready and remove waffles with the help of a fork.
- Add some water if the batter thickens while doing batches.
- Serve it with berries, maple syrup and melted butter.
