Broccoli, cooked and chopped | 1 cup |
Mozzarella, shredded | 1 cup |
Corn kernels | 1/4 cup |
Garlic powder | 1/4 tsp |
Flour | 3 cups |
Oil (sunflower oil, olive oil) | 6 tbsp |
Sugar | 1 tsp |
Salt | 1 tsp |
Warm water | 200 ml |
Salt | to taste |
Freshly ground black pepper | to taste |
Olive oil | 2 tbsp |
Directions :
- If you want to use homemade tortillas this would be the first step.
- In a medium bowl, mix flour with salt and sugar. Add oil and warm water to the flour mixture. Mix everything together using your hands, knead until smooth and pulls away from the side of the bowl.
- Cut into 8-10 equal pieces. With a rolling pin, roll out each one to a circle about 9 inches in diameter and 1/12 (1.5-2 mm) thick. They need to be really thin almost transparent.
- Preheat a large non-stick pan over medium-high heat. You don't need to add any oil or butter. Cook the tortilla on both sides until the dough get brown spots all over the tortilla that will only take few seconds. Must be very careful and work rapidly as they cook really fast. Don't overcook so the tortilla remains soft and able to be rolled. Once finished, the tortillas are ready to serve.
- After you make them let them cool down, to reach the room temperature.
- Combine broccoli with cheese, corn and garlic powder. Add salt and pepper. Divide mixture in four, for each tortilla. Add the mixture on one half of the tortillas, and fold it with the other half.
- Heat one tablespoon of oil in a large frying pan over medium heat until hot, about 3 minutes. Carefully add two folded tortillas and cook on each side for several minutes until the bottom of tortilla is golden. Flip and cook on the other side too, cheese should be melted and the tortillas gold and crisp. Repeat this step with the other two.
- Remove from pan and slice into wedges. Serve hot or warm and enjoy this homemade cooking recipes.
