Whole-grain melba toasts | 10 |
Whole wheat breadcrumbs | 1/3 cup |
Minced fresh oregano | 1 tablespoon |
Kosher salt | to taste |
Freshly ground black pepper | to taste |
Ground cayenne, optional | 1 Large pinch |
Egg whites | 2 large |
Egg | 1 large |
Garlic, minced | 1 clove |
Whole wheat pastry flour or unbleached all-purpose flour | 1/3 cup |
Part-skim mozzarella string cheese, halved crosswise | 8 sticks |
Olive oil cooking spray, for coating the cheese sticks | few spoons |
SWtore-bought marinara sauce, warmed, for serving | 1/3 cup |
Directions :
- Put the melba toasts in food processor to make them into semi-coarse crumbs;
- Transfer this to a medium dish.
- Mix the breadcrumbs, oregano, salt and pepper to taste and the cayenne if using.
- In another bowl Whisk the egg whites, add whole egg, garlic and 1/4 teaspoon each salt and pepper
- Put flour and 1/4 teaspoon salt in a re sealable plastic bag.
- Add cheese pieces to the bag.
- Close and shake them till coat.
- Dip cheese piece in the egg mixture first, and then roll firmly in the breadcrumb mixture;
- Then dip the same piece again in the egg mixture followed by the breadcrumb mixture
- Place on a parchment paper-lined plate or baking sheet.
- Freeze for 15 minutes or overnight.
- Preheat the oven to 475 degrees F.
- Transfer these frozen cheese sticks to baking sheet.
- Coat cheese sticks with olive oil cooking spray.
- Bake until golden, for 12 minutes.
- Sprinkle with salt and pepper to taste.
- Serve immediately with the marinara sauce.
